PB & J pocket

I know its been awhile since I've put a recipe on for myself so I thought I'd share a quick an easy one that my kids love. Its not your typical peanut butter & jelly but its been a life saver since I 1st made these. My kids love pb&j's & of course I was out of bread without even realizing it, seems I live in the middle of nowhere I decided I'd break out my creative side & used what I did have which ended up being Pillsbury crescent rolls. So they got their pb&j's but it just wasn't quite what they were hoping for but they absolutely loved them!

1 package Crescent rolls

Peanut Butter


Preheat your oven to directions on crescent rolls. Form a pocket with the crescent rolls then cook for approximately 8-10mins so they are barely golden brown and spread on your desired amount of peanut butter (which melts if you put it on when they are still warm) finally drop a spoonful of jelly in. You do need a fork for these pb&j's but what kid doesn't love something new. I had my neighbors grand kids over playing one day when we had these & they thought they were so yummy & i was SUPER COOL (i swear it had nothing to do with me letting them jump from our tramp into the creek & mud! hehe) for making these yummy "treats" which is always a great thing when kids consider their lunch a treat. Steak Burrito

Last night my hubs grilled steak for dinner. To go with the steak I cooked some frozen corn. It was very yummy... I have to give my hubs props he's the master griller!!! So today I was looking in the fridge trying to find something quick & easy for lunch and
*** TA DA *** Steak burritos
4 -10 oz ribeye steaks (marinated Lawry's Sesame Ginger sauce) and grilledToppings:

1 bag frozen corn (cooked) Grated cheddar cheese Jalepenos (I use the bottle of tamed for my kids) Diced tomatoes Tortillas Fried onions Guacamole Sour Cream Slice cooked steaks in strips. Place on tortillas. Top with all the toppings you prefer, any would work I just had shredded cheddar. Microwave til cheese is melted. Viola!!!


Candy Bar Cake (

We recently had a family get together where we were having a weinie roast and we were supposed to bring something to share. I was running late so I thought I better make a dessert since, its the last thing people eat. I had found this recipe online and thought ... what a great oppurtunity to get others opinions of this recipe. :) Well it was definitely a winner!! I was very excited with the response, especially my grandma who loved it!!
1 (18.25 ounce) package devil's food cake mix 1 1/2 cups milk 3 eggs 3/4 cup vegetable oil 1 (3.5 ounce) package instant vanilla pudding mix 1 (8 ounce) package cream cheese 1/2 cup white sugar 1 cup confectioners' sugar 1 (12 ounce) container frozen whipped toppin thawed 1 cup chopped pecans 4 (1.5 ounce) bars milk chocolate candy, coarsly chopped
Preheat oven to 325* F (165 degrees C). Grease and flour 3 (8 inch) pans ( I just did mine in a 9x13 cake pan to make it go further and it was still great.) In a large bowl, combine cake mix, milk, eggs, oil and instant vanilla pudding mix. Beat on low speed until blended. Scrape bowl, and beat 4 minutes on medium speed. Pour batter into prepared pan(s) Bake in the preheated oven for 20-25 minutes, (if you do it in a 9x13 pan like I did it takes about 35-40 minutes) or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.

To make the frosting: In a large bowl, beat the cream cheese with the white sugar and confectioners' sugar until smooth. Fold in the whipped topping, pecans and chopped chocolate. Spread between layers and on top and sides of cake. I hope you had a great 24th!!

Champion Cookies (Taste Of Home)

Anything that has snickers in it has got to be good right??? I actually have a couple snicker cookie recipes but one is a snickerdoodle that you roll the dough around the snickers, and this one that you chop the snickers up & put it in the dough.... I will post both for you to try then please come back and let me know which one is your favorite!!!
2/3 c. shortening 1 1/4 c. packed brown sugar 1 egg 1 tsp. vanilla extract 1 1/2 c. flour 1 tsp. baking powder 1 tsp. baking soda 1/4- 1/2 tsp ground cinnamon ( I use 1/4 but it calls for 1/2) 1/4 tsp salt 4 snickers candy bars (2.07 oz) chopped 1/2 c. quick cooking oats
Cream shortening & brown sugar. Beat in egg & vanilla. Combine flour, baking powder, soda, cinnamon & salt. Gradually add to creamed mix. Stir in candy & oats. Drop by tsp 2" apart onto greased cookie sheet. Bake at 350* for 10-12 min. Cool on wire racks.


Roller Coaster Pancakes

I remember growing up my mom or sister would make these for us. As a kid I thought they looked so cool. Now I make these for my kids and there always amazed how they always are different shapes when you pull them out of the oven. This is a fast & easy breakfast that your kids will love. 6 Eggs beaten well 1 Cup milk 1/2 tsp Sugar 1 Cup flour 1/2 tsp Salt 1 tsp Vanilla Mix all ingredients together. Melt 6 Tbsp. Butter or margarine. Pour in the bottom of a cake pan. Pour pancake mix on top of the butter. Bake at 425 for 25 minutes. Serve with syrup. Enjoy!!!


Fried Zucchini & Squash

Man what a summer we have had. As you already know its baseball, baseball, baseball every night then the city rec league ends we take a family vacation for 1 week to Sunny & Hot California (soooo nice). The day we return we start up All Stars in baseball. The following day I did a Relay for Life, cancer is something that has effected everyone in one way or another. I would highly recommend everyone to participate in a Relay for Life once in there life. It really opened my eyes and was very touching!!! I walked for my family that has passed on from cancer who I truly miss. I also walked for those SURVIVORS in my family who I love so much and I am so glad there still here!!! So I am now revived and cooking again. I hope your all having a great summer!!!

Now here is a great recipe for all those who have gardens sprouting!! I know I get lots of zucchini so be ready for more zucchini recipes! (Sorry about the pic i had to use my cell phone)

2 small zucchinis (about 2 1/2 cups)
2 small crooknecks (about 2 1/2 cups)
1 tbsp olive oil
2 tsp soy sauce
1 tsp teriyaki sauce
1/2 tsp garlic salt
1/8 tsp pepper

Cut veggies in chunks. Put olive oil & veggies in a pan. Mix remaining ingredients together. Pour over veggies. Continue cooking until veggies are tender crisp


BBQ Pulled Pork Sandwich (

This sandwich is perfect for this hot days. Leave it cooking while your at the lake or a baseball game ;) 3 lbs boneless pork shoulder Garlic powder Onion powder Kosher salt Black pepper Liquid smoke 12 oz. BBQ sauce Rinse pork in cold water, trim off excess fat. Pat dry. Sprinkle roast with liquid smoke & seasonings. (Always remember to use a little more seasonings when cooking in a crock pot) Place roast in slow cooker. Add 1/2" water. Cook on low 8-10 hours. When finished cooking remove roast & drain liquid. Return roast to crock pot. Shred pork ( I just use 2 forks & pull it apart). Pour BBQ over meatReturn to crock pot until heated through. Serve on rolls. *Can add: coleslaw, dill pickles, peperoncinis etc. Yummy yum yum!!!
