Easy Cheese Stix

I am always looking for simple things to make for after school snacks. I happened to have a package of wonton wrappers in my fridge and thought we would give this a try. Now my kids make them all the time.



Won ton wrappers
String cheese



Break one string cheese in half or thirds. My half pieces leaked out a little. Wrap them in wrapper. Dip finger in water to seal the edges. Spray with Pam to give them a little crispness.



Bake at 400 degrees for 8 minutes then turn and 8 minutes more. Dip in marinara, pizza sauce or ranch.

Orange Creamsicle Popcorn

Well if you cant tell I have been slacking a little. This is my season for craziness. My boys have started baseball so I dont get a lot of time to do things besides running boys alllll over!!! I hope you will stick it out with me through the craziness of my summer! I will keep posting but it will only be about 1x a week! :)

Ok I will admit when my sis first sent me this recipe I kind of pulled a face and thought really orange flavored popcorn??? Orange is not one of my favorite flavors of anything HOWEVER THIS STUFF ROCKED!!!!!!! I couldnt believe how yummy it was!! I however did use microwave popcorn which was about 4 bags :)


Orange Creamsicle Popcorn (Cooking Classy)

Ingredients:
1 cup unpopped popcorn kernals
1/2 cup butter
1 can sweetened condensed milk
1/4 cup cream
1 cup granulated sugar
1/8 tsp salt
1 Tbsp orange zest
4 cups miniature marshmallows
1 tsp orange extract

Directions: Pop popcorn into two very large mixing bowls, set aside. Melt butter in a large saucepan over medium heat. Stir in sweetened condensed milk, cream, sugar, salt and orange zest. Bring mixture to a boil, stirring frequently. Boil mixture one and a half minutes, stirring constantly. Remove from heat. Add in marshmallows and stir until melted. Mix in orange extract. Divide warm mixture evenly over two bowls of popcorn and toss with a spatula to coat. Allow to rest 20 minutes to set.

For an alternate method:

She also made this popcorn in a dry version. Omit the cream, then when you stir in marshmallows also stir in 1/3 cup white chocolate chips.

Antipasto Kabobs (The Hungry Housewife)

I put mozzarella pearls on which i found at wal-mart that i marinated with the tortellini's but you could also use string cheese and just cut it into slices

ANTIPASTO KABOBS

1 9 oz package of Three Cheese Tortellini, cooked to package directions

1 can Medium or Large pitted Black Olives

1 5.75 oz jar Green Olives

2 12 oz containers of marinated mozzarella balls(usually found near the speciality cheeses)

30 slices of Salami, cut in half

60 pieces of pepperoni

1 cup Balsamic Vinaigrette Salad Dressing

60 Skewers

Place the cooked tortellini in a bowl or large gallon freeze bag. Pour the salad dressing over the top and marinade in the fridge for a few hours. Drain the pasta. Place one of each item onto the skewer using the pointy side. Can be made a few hours in advance. Just cover tightly and place in the refrigerator.

Lemon Chex Buddies (chex.com)

Here is a football snack the kiddos can enjoy eating as much as they might enjoy helping mom or dad in the kitchen making it. It's quick and easy! The girls scouts use to make a cookie that was my absolute favorite, The Lemon Cooler, the year they discontinued them my palate wept. I needed a replacement and thus the Lemon Chex Buddies.
Ingredients
9cups Rice Chex® cereal
1 1/4cups white vanilla baking chips
1/4cup butter or margarine
4teaspoons grated lemon peel
2tablespoons fresh lemon juice
2cups powdered sugar
Preparation Directions
1.Into large bowl, measure cereal; set aside.
2.In 1-quart microwavable bowl, microwave chips, butter, lemon peel and juice uncovered on High 1 minute; stir. Microwave about 30 seconds longer or until mixture can be stirred smooth. Pour mixture over cereal, stirring until evenly coated. Pour into 2-gallon resealable food-storage plastic bag.
3.Add powdered sugar. Seal bag; gently shake until well coated. Spread on waxed paper or foil to cool. Store in airtight container.

Rolo Pretzel Turtles "Hostess with the Mostess"

Who doesn't love a turtle? These easy bite size snacks are a quick fix for your Superbowl get together. Us woman want to enjoy the game to! Do you have the willpower to eat just one?
Rolo chocolate candies
Mini pretzels
Nuts - toasted pecans/almonds/hazelnuts/walnuts
Preheat your oven to 350
Unwrap your Rolos. Place pretzels on baking sheet. Top with a Rolo.

Bake in oven for 3-5 minutes, until the chocolate just begins to melt. The Rolo should be soft but not completely melted.

Remove from oven, place on cooling rack and immediately squish the chocolate with a nut. Watch the caramel ooze out. YUM!

Snickers Popcorn (Cookies and Cups)

There really should be a SA! Snickers anonymous, because i can't get enough of it lately!
By husband says this is DA Bomb and we both agree that very little should go in a bowl
as your sitting down to enjoy it, because if its left in a large container or zip lock your bound
to eat it all in one sitting.

  • 8 quarts air popped corn (about 2 cups of kernels)
  • 1 cup salted butter
  • 2 cups light brown sugar, packed
  • 1 teaspoon salt
  • 1/2 cup light corn syrup
  • 1 teaspoon baking soda
  • 1 cup salted peanuts
  • 30 “Fun Size” Snickers bars coarsely chopped
  • 3 oz melted semi sweet chocolate (optional)

  1. Preheat oven to 200°
  2. Over medium heat boil butter, brown sugar, salt and corn syrup for 5 minutes.
  3. Remove from heat and stir in your baking soda.
  4. Pour over your popcorn and stir to coat evenly.
  5. Transfer to waxed paper lined counter and sprinkle peanuts on top. Stir until all is coated evenly.
  6. Transfer popcorn into a large roasting pan and bake for 1 hour 15 minutes, stirring every 15 minutes.
  7. Remove from oven and stir in your coarsely chopped Snickers. Return to oven for 3 more minutes so the Snickers begin to melt slightly into the popcorn.
  8. Remove from pan and transfer popcorn back to wax paper to cool.
  9. Drizzle melted chocolate on top of popcorn if desired.
  10. Let set and store in an airtight container.

Bacon Wrapped Jalapenos (Nicole Kirkbride)

I LOVE LOVE LOVE jalapeno poppers from the deli or from the store but HOLY COW they can be expensive!!! So we tried this and it was great not quite the same but it works plus its so yummy!!

wash and clean jalapenos, then slice them in half lengthwise.
Stuff with cream cheese then wrap with bacon.

Bake at 350 for about an hour or until bacon is cooked.
Easy and Good!! I took these to a baseball game a couple years ago and the MEN loved them! I like to dip mine in ranch to tone down the heat a little. Hope you like these or at least your hubby does :)

Baked Caramel Popcorn (allrecipe.com)

Recently I had an all night read-a-thon with my kids. I wanted it to be
lots of fun, and full of lots of yummy food. These are the memories that I want my kids to remember forever and maybe one day do with their kids.

My kids love caramel popcorn but sticky fingers & books don't mix well.
Soooooo I thought we would try a baked aka less sticky caramel popcorn. It
was a hit!!!

The kids lasted until 11:30 and thats about how long the popcorn lasted
lol.



Ingredients
1 cup butter
2 cups brown sugar
1/2 cup corn syrup
1/2 teaspoon baking soda
1 teaspoon vanilla extract
3 bags microwave popcorn

Mix butter, brown sugar, corn syrup in the microwave. Until boiling.
Remove from microwave and add vanilla & baking soda (be prepared this will make your caramel rise)

Pour over cooked popcorn. Stir until coated well. Place on a cookie sheet.
Bake at 250 stirring every 15 minutes. The longer you cook, the crispier
it gets. Don't cook longer than 1 hour. I prefer 30-45 minutes, its crunchy
but not too hard!!
