California Turkey Club Wrap

Am I the only person who hates to cook when is it so hot outside, yet want to provide something good for my family? About a month ago I was at a big hospital for a Dr. appointment and had 4 kids proclaiming they were starving. I told them we could have a little snack from the cafeteria since it wasn't dinner time and we were waiting for dad to go eat. When we went down and were looking around I seen the special of the day was a Cali club wrap. Just seeing that made me all of the sudden starving but since we had to wait I asked really nicely if the kids would like to share 2 of these :) (killing two birds with one stone... the kids got a snack and I got a sample of this heavenly thing) YUMMM!! It didn't take long for me to start making these around the house.

Are you ready for this? Its so easy its like making a sandwich :)



Spinach tortillas
turkey (can use ham too)
provolone or swiss cheese
spinach or lettuce
avocado
tomatoes
cooked bacon
red onion
ranch or café rio cilantro dressing (either one works great)




Layer in a spinach tortilla as listed wrap up and serve :) perfection!!



Somehow I always get the worst looking tortilla and its mine I take a picture of...sorry!

Chicken Ceasar Sandwich in the slow cooker

I first had this sandwich at a bunco party and thought it was wonderful. The other day I was looking for something I could make ahead and take to baseball games. Something quick and easy. I remembered this and text my friend and asked her for the recipe. It worked out perfectly!! Not only is it sooo good on buns but my kids like to eat it with pretzel chips. It is also one of those meals you could serve for a large group of people .... simple and yet with the right sides its a great meal.



2 pounds boneless skinless chicken thighs
1/2 to 1 cup of your favorite Caesar dressing (I like Cardini's and Brianna's Asiago Caesar)
1/2 cup shredded Parmesan cheese
1/4 cup fresh chopped parsley (if you don't have fresh use around 2 teaspoons of dried parsley)
1/2 teaspoon ground pepper
2 cups shredded romaine lettuce
12 slider buns or 4-6 regular sized hamburger buns


Place chicken in a 3-4 quart slow cooker with 1-2 cups of water, cover and cook on low heat for 4-6 hours.
Remove chicken from cooker using a slotted spoon and drain the water from the slow cooker. Place chicken on a cutting board and pull chicken into shreds, discarding any fat.
Place chicken back in the cooker and pour dressing, Parmesan cheese, parsley, and pepper over the top. I really make sure that I discard any fat pieces so by the time I was done I only used about 1/2 cup of dressing but you make need more if you have more chicken. Stir until mixed evenly. Cover and cook on high heat for 30 minutes or until mixture is hot.
Spoon 1/4 cup mixture onto each slider bun if you are making sliders or more for regular sized buns. Top with extra shredded Parmesan cheese and lettuce to serve

Avocado Egg Sandwich

How many of you have seen the baked eggs on pinterest?? Its amazing you can bake them instead of boiling them. SO EASY!!!! So we are not really huge on eating eggs. I know they are healthy for you and are a great source of protein but they are not our favorites. So how can you disguise an egg?? You make an avocado and egg sandwich :) I know it doesn't sound like the best combo but man if you just give it a try you will think differently!!! This is such an easy recipe I am almost embarrassed to post it but I couldn't not share it with you or I would feel selfish lol. Can you imagine how healthy this sandwich is???




3 boiled eggs
1 small avocado
1-2 TBS mayo
salt and pepper to taste
served on whole grain bread

Mash your egg and avocado. Add mayo and salt and pepper. Spread over bread. Serve. EASY PEASY RIGHT!!!

Hawaiian Sweet Roll Sammies

SUPERBOWL GOODIES!!!

I altered these mini sandwiches to our liking so if you want the original recipe you will need to go to Beyer Beware blog. After trying it both ways my family and i decided we like this best so i hope you will to
Ingredients: 1 pkg of 12 Hawaiian Sweet Rolls 1 onion, minced 1 stick of butter 3 TBS plus 2 tsp teriyaki Sauce 3 tsp toasted sesame seeds 1 lb shaved ham 8 slices hard salami cut into pieces 8 slices pepper jack cheese Directions: 1.) Melt butter in small skillet and add onions. After onions are softened add teriyaki sauce and toasted sesame seeds. Simmer for several minutes 2.) Slice rolls as a group length wise and place bottoms in an aluminum foil lined 13"x9" pan 3.) Spread 3/4 of onion mixture on rolls bottoms, followed by the ham, salami, and cheese slices. 4.) Top with the roll tops. Spread the remaining onion mixture over the top. Cover with aluminum foil and bake covered for 20 minutes @ 350* than switch to broil and let tops caramelize until golden. Original recipe says you can cover and refrigerate until ready to bake. I have not done this yet. As you can see in the pictures i only prepared 9 for my family and i used Swiss on about 3 of them for the kids. I Did not cut the salami but would recommend doing so because it makes cutting the sandwiches apart much simpler.

Hawaiian Burgers (my hubbys co-worker)

My hubby is guilty!!

Guilty of contributing to an addict!!


My hubby came home the other day with a couple recipes from a co-worker. He knows I have an addiction for recipes so my eyes lite up and I went to the grocery store the next day for a few ingredients and viola!!! Buns
Hamburger Patties or ground beef to shape your own
Onion slices
Tomato slices
Cheese*
Bacon (peppered is best)
Pineapple rings
Avocados
Jalapeno slices
Teriyaki sauce
Cook patties brushing teriyaki on both sides while cooking. Cook bacon. When patties are almost done put the pineapple on top of patty and put a jalapeno in the middle of the pineapple ring. Cover with cheese. Butter buns & toast them. Serve with toppings.

* cheese could be whatever you prefer. I like pepperjack or provolone.

This is a great burger that tastes different than the norm.

Chicken Salad Sandwich

I have had many friends that have asked me for a chicken salad sandwich recipe. This has always been my go to recipe for reunions, camping, showers, etc. It goes great on any kind of bread. I usually serve it on croissants but I had this loaf of everything french bread from walmart so I thought why not right?!?



1/4-1/2 tsp garlic salt
1(approx. 27 oz) can chicken
2 c. sliced grapes (I used green this time but any work)
1 1/2 -2 c. mayo
1/4 tsp Italian seasoning
you can also put celery in it if you prefer


Mix all together and serve on bread or eat plain. Goes great with chips & salsa. Good eats :)

PB & J pocket

I know its been awhile since I've put a recipe on for myself so I thought I'd share a quick an easy one that my kids love. Its not your typical peanut butter & jelly but its been a life saver since I 1st made these. My kids love pb&j's & of course I was out of bread without even realizing it, seems I live in the middle of nowhere I decided I'd break out my creative side & used what I did have which ended up being Pillsbury crescent rolls. So they got their pb&j's but it just wasn't quite what they were hoping for but they absolutely loved them!




1 package Crescent rolls


Peanut Butter


Jelly



Preheat your oven to directions on crescent rolls. Form a pocket with the crescent rolls then cook for approximately 8-10mins so they are barely golden brown and spread on your desired amount of peanut butter (which melts if you put it on when they are still warm) finally drop a spoonful of jelly in. You do need a fork for these pb&j's but what kid doesn't love something new. I had my neighbors grand kids over playing one day when we had these & they thought they were so yummy & i was SUPER COOL (i swear it had nothing to do with me letting them jump from our tramp into the creek & mud! hehe) for making these yummy "treats" which is always a great thing when kids consider their lunch a treat. BBQ Pulled Pork Sandwich (ourbestbites.com)

This sandwich is perfect for this hot days. Leave it cooking while your at the lake or a baseball game ;) 3 lbs boneless pork shoulder Garlic powder Onion powder Kosher salt Black pepper Liquid smoke 12 oz. BBQ sauce Rinse pork in cold water, trim off excess fat. Pat dry. Sprinkle roast with liquid smoke & seasonings. (Always remember to use a little more seasonings when cooking in a crock pot) Place roast in slow cooker. Add 1/2" water. Cook on low 8-10 hours. When finished cooking remove roast & drain liquid. Return roast to crock pot. Shred pork ( I just use 2 forks & pull it apart). Pour BBQ over meatReturn to crock pot until heated through. Serve on rolls. *Can add: coleslaw, dill pickles, peperoncinis etc. Yummy yum yum!!!

Jerk Sandwich

This sandwich is a little spicy but YUMMY!!!

1 1/2 lbs. chicken breast
1/4 c. ketchup
2 Tbsp. Jerk seasoning
1/2 c. chicken broth
1 onion, sliced
1 bell pepper, chopped

Mix together ketchup, chicken broth, and jerk seasoning. Put chicken and veggies in a crock pot. Pour sauce over chicken. Cook for 6-8 hours on low or 4-5 hours on high. Until chicken is cooked to temperature (170*-180*). Shred chicken a little using 2 forks and pulling chicken apart. Serve on buns or hoagie.

Southwestern Steak Sandwiches

This is the perfect sandwich for a superbowl party !!!!!! VERY YUMMY!!!!





1 1/2 lb. boneless beef sirloin steak, TENDERIZED, about 1" thick trimmed of fat, and cut into thin bite size strips (your butcher can do this for you if you ask and they usually do it for free)
1 medium onion, halved crosswise, sliced
1/4 c. lime juice
3 Tbsp. oil
2 garlic cloves, sliced
2 tsp. chili powder
1/2 tsp. salt
1 green bell pepper, cut into strips
1 red bell pepper, cut into strips
6 sandwich buns (onion, kaiser, or wheat are best), split
6 (3/4 oz) slices hot pepper Monteray Jack cheese, halved


Place steak and onion in a resealable food storage bag (gallon size) In a bowl combine lime juice, oil, garlic, chili powder, and salt; mix well. Pour over steak and onion in bag; seal bag. Turn bag to distribute marinade. Refrigerate 3 hours turning occasionally.

Heat skillet until hot. Add steak, onion, and all marinade. Add peppers; cook until no longer pink, bell peppers and onion are crisp tender and most of the liquid is evaporated.

Place bun halves, cut side up, on greased cookie sheet; broil 4-6 inches from heat for 1-2 minutes or until toasted. Spoon beef and veggies onto bottom halves of bun. Top each with 2 peices of cheese; return to broiler for 1 minute to melt cheese; cover with top of buns. If desired top with salsa, sour cream or guacamole, or spread a thin later of mayo on bun.

I like it with just a thin layer of mayo to moisten the bun a little. Also good with peperoncicis!!
