Restaurant style salsa

My family is a very tight family. We love to be together. We play ball together, we watch games together, we do everything together. One thing that we love is to play games together. When we play we have to have snacks. One of our favorite snacks is SALSA!! Last Sunday my son and I decided we wanted to make salsa and we didn't have all the ingredients for our normal salsa so we looked up other recipes and came across this one. We happened to have all the ingredients for this one and so my boys and I whipped it up. It was so easy and so dang good we made another batch that same day. This recipe is definitely a keeper.


1 can (28 Ounce) Whole Tomatoes With Juice
2 cans (10 Ounce) Rotel (diced Tomatoes And Green Chilies)
¼ cups Chopped Onion
1 clove Garlic, Minced
1 whole Jalapeno, Quartered And Sliced Thin
1/4 teaspoons Sugar
1/4 teaspoons Salt
1/4 teaspoons Ground Cumin
1/2 cup Cilantro (more To Taste!)
1/2 whole Lime Juice


Note: this is a very large batch. Recommend using a 12-cup food processor, or you can process the ingredients in batches and then mix everything together in a large mixing bowl.

Combine whole tomatoes, Rotel, onion, jalapeno, garlic, sugar, salt, cumin, lime juice, and cilantro in a blender or food processor. Pulse until you get the salsa to the consistency you’d like—I do about 10 to 15 pulses. Test seasonings with a tortilla chip and adjust as needed.

Refrigerate salsa for at least an hour. Serve with tortilla chips or cheese nachos.

Dorito Dip

My little girl loves cottage cheese and it is healthy for her so I wont complain however my boys wont eat it. BUT my boys love dip! So this dip was perfect for them and they loved it!!! Its probably one of the healthiest dips we have ever made. It would be perfect for superbowl!!!!





1 (24 oz)canister cottage cheese

2 tomatoes, diced

2 avocados, diced

1/2 c. canned corn, drained

3 green onions, chopped

1/2 tsp. garlic powder

salt and pepper to taste



Instructions

Spoon cottage cheese into a medium-sized bowl. Fold in remaining ingredients until well combined. Serve with Doritos.

Hot Corn Dip

At my family functions we love dips and lots of them!! I have a sister who is married to a guy that loves heat... the hotter the better and she loves him so she makes lots of spicy recipes!!



2 cups shredded chedder cheese
1 cup shredded Montery Jack
2 tbs chipotle peppers in adobo sauce, diced small (I used jalapenos)
1 small can (4oz) diced green chilies, undrained
1/2 cup Mayo
1/4 tsp garlic powder
1 11oz can of corn, drained
1 small tomato
2 tbs cilantro, chopped
2 tbs green onions, sliced thin

Preheat oven to 350 degrees.

Mix the cheeses, chiptole and green peppers, mayo, garlic powder and corn together.

Pour into an oven safe dish.

Bake 20 minutes or until golden brown and bubbly

Top with diced tomatoes, green onions, and cilantro. Serve immediately with tortilla chips

Cookie Dough Dip

Awesome superbowl dip!!!
This is alot like my toffee dip recipe with a little tweaking

1 8 oz. cream cheese softened
1/2 c. butter softened
1 c. powdered sugar
2 Tbsp. brown sugar
1 1/2 tsp. vanilla
1 cup chocolate chips
1 cup toffee bits or 1 cup granola

Cream butter & cream cheese together. Add all remaining ingredients and mix until well combined. Serve with apples or graham crackers (my one son loves it with wheat thins :/)

Sweet Potato Fries & Avocado dip (cooking channel's - Ingrid Hoffman) - adapted by Carolyn

Ok so after much begging Carolyn is going to contribute to the blog here and there when she can by providing us with some great recipes so im going to post a few that she sent me after she made 1 of our sisters lunch that ended up getting shared with quiet a few people in the office. So since so many people asked for the recipe there she figured it would be a great thing to share on the blog so i hope all of you that have tried or will be trying this let us know what you think.
SWEET POTATO FRIES:
2 large sweet potatoes (peeled or unpeeled) cut into 4in. long & 1/4-1/2 in. thick fries
2 TBS olive oil
1 tsp paprika
1/2 tsp chili powder
1/2 tsp ground coriander
coarse ground rock salt, and freshly ground black pepper, to taste
Preheat your oven to 450* F Line a baking sheet with aluminum foil and set aside
Place the sweet potatoes in a lg bowl and toss with olive oil until the sweet potatoes are coated. Add the paprika, chili powder, coriander, salt, and pepper; toss to distribute evenly. Arrange the coated fries in a single layer on the prepared pan. Bake for 20 minutes on the lower rack until the sweet potatoes soften. Transfer the pan to the upper rack of the oven and bake 10 minutes longer, until fries are crispy. Serve with avocado dip.
AVOCADO DIP:
1 avocado
1/3 c. mayo
1/3 c. cream cheese
1 jalapeno, seeded & chopped
2 scallions, white & light green part only, chopped
1 lime juiced
salt & freshly ground pepper
Place the avocado, mayonnaise, cream cheese, jalapeno, scallions, and lime juice into a blender or small food processor. Blend for 1 minute or until you have a smooth paste. Season with salt and pepper, to taste. Serve as a dip for the Sweet Potato Oven Fries.

Cool Cucumber Dip -Robin B.

I don't know about you guys but I could live off chips & dips & snacky foods during the summer. Some nights are just toooo hot and busy to bake. This dip is so cool & refreshing its perfect!!

2 cucumbers peeled & diced
1/2 c. onion or jalapeno chopped
24 oz. Cottage cheese
1 c. mayo
1/4-1/2 tsp. Accent (or salt)
1/4 tsp garlic salt
Pepper to taste

Mix all together & chill. Serve with chips or veggies

Alfredo (Rhonda)

ok I have tried many many alfredo recipes and this is the one I keep coming back too! YES ITS THICK AND YES ITS CREAMY but isn't that what Alfredo is all about??? I am not the kind that likes the thin alfredo that the skinny chicks like. If it don't taste good it ain't worth making!!!! Hence the name of the blog!

1 pint heavy cream
1 pkg. (8 oz.)cream cheese
3/4 c. real Parmesan
1/2 c. butter
1 tsp. garlic powder
salt and pepper to taste

In a saucepan melt butter, add cream cheese. Once cream cheese is softened add heavy cream. Simmer on low heat for 15 minutes. Add Parmesan, garlic, salt, & pepper. Stir well. Serve over noodles.

* you can also add chicken, bacon or broccoli I have tried all these and its always good!!!

Now when I make this I make it about 4 times because I LOVE ALFREDO and I hate pasta so its weird huh! Anyways I love alfredo sauce with my bread sticks, I love alfredo sauce in my calzones and in another post you will see what else I do with my alfredo sauce! It doesnt take very much to coat your stuff either!

BLT DIP (Betty Crocker) adapted by Rhonda

I have to tell you this recipe has kind of a funny story behind it, Rhonda made it for Super Bowl and brought  some down to my house (we had sick kiddos so we stayed home). Robin and Rhonda were just raving about it so my hubby and I tried it and thought "its ok".So Last night we had an Ultimate Ladies Night and had all kinds of booths set up for women... Miche Bags, Vault Denim,  a pedicure station, Scentsy, and a massage booth.We also had some yummy food.  So last night when she brought it I couldn't stay out of it and had to apologize to her lol. When I had eaten it at super bowl it was cold. Last night it was hot and fresh and OMGSH so Yummy!!! The problem before was I was thinking it was like a cheese ball so I didn't know you have to warm it up! So please eat it warm lol!  The food was a hit last night, therefore I will be posting the recipes over the next week. This one Rhonda made and her pan was cleaned out fast! I thought there was going to be a fight over who got to lick the pan clean lol! Everyone loved it!!!! But SO HERE IT IS LADIES!!!

2 1/2 lb. bacon cooked
2 cup mayonnaise
2 cup sour cream
2 (8oz) cream cheese, softened
3 cups cheddar cheese
2 tomato, seeded & chopped
2 bunches chopped green onions

Additional green onions, cooked bacon, tomato and lettuce for garnishment if desired (Rhonda did 1/2 lb bacon , 1 tomato, and 1 bunch green onions on top and left out the lettuce)

Preheat oven to 350. Mix mayo, sour cream, and cream cheese in a bowl until well mixed. Crumble bacon into bacon and stir. Add cheddar cheese, green onions, tomato and mix well. Pour into a cake pan and bake for 20 minutes or until bubbly. Garnish with additional green onions, tomato, crumbled bacon etc. Serve with corn chips, or tortilla chips.


*Tip--- make sure you give the tomato a little squeeze to get rid of any excess juice so you don't have extra liquid on your

Jareds Salsa - Favfamilyrecipes.com (adapted by me)

Ok so I thought that Mexican salsa recipe was good but personally  I think this was by far so much better!!!

1 can (15oz.) corn
1 (10 oz) can extra hot Rotel tomatoes (I couldn't find these at the grocery store so I improvised and used a can of tomatoes with green chilies in them then added a small can diced jalapenos)
3 (15 oz) cans diced tomatoes
1 can (small) diced olives
6-8 oz. zesty Italian dressing ( I made my own with a 1 oz packet of the dressing mix, vinegar, oil, and water -directions on back of one of the packets)
1 medium chopped onion
juice from 2 limes ( I recently made this salsa for a family get together and had no limes on hand but I had a bunch of lemons so I tried that out using I whole lemon and it was sooooo good the whole double batch was eaten that day)
2 tsp. minced garlic

Mix all ingredients together and let sit overnight. When ready to serve you can also add avocados.

Shrimp Dip

Blend until smooth:
1 (8oz) cream cheese softened
1/2 c. sour cream
1/4 c. mayo

Put cream cheese mix in bottom of dish layer as follows:
cocktail sauce, mozzarella cheese, shrimp (small), tomatoes (diced), green onions (diced)

Serve with crackers we like it with wheat thins!!

Toffee Dip

So this week is Super Bowl week are you ready???  Here is a simple recipe that EVERYONE will love!!!

1 pkg. cream cheese (at room temperature)
1/2-2/3 pkg. toffee bits
1/2 c. brown sugar
1/4 c. powdered sugar
1 tsp. vanilla

Mix cream cheese first to get the lumps out of it. Add vanilla mix until smooth. Add sugars. Then add the toffee chips. Chill until serving. Serve with apples or other fruit.

Sausage Dip (family)

Yes, as a friend pointed out to me it is football season, so I guess that means  we need some good finger foods right!!!
How about a Sausage Dip that can be as hot as you want to make it!!! This one is super easy yet OH so GOOD!!!


3 cans diced green chilies (these range in heat)
1 can diced jalepenos (go big or go home)
4 cups sour cream
2 lbs cooked sausage ( we use breakfast sausage but you can use what you like probably not maple :)
Put all in a crockpot and serve with chips
(Robin likes to add a little garlic salt too)
