Rhubarb Pie (allrecipes.com)

Tis the Season for rhubarb sprouting up all over and begging to be made into some sort of dessert or jam. I love rhubarb no matter what its in or even plain sprinkled with a little salt. This was actually my first rhubarb pie I had ever made. My momma usually makes them for everyone so I just wait for that lol. However I had some that needed to be used so I thought I would find a quick & easy recipe and go for it! SUCCESS!!!

5 cups chopped rhubarb
1 2/3 cups white sugar
7 tablespoons all-purpose flour
1 tablespoon butter
1 refrigerated double crust pie crust

Mix sugar & flour together. Press bottom crust into a 9" pan. Sprinkle about 1/4 c. of flour & sugar mix into crust. THIS IS MANDATORY to make a nice crisp crust so its not soggy. Place the rhubarb in the crust and sprinkle with remaining flour/sugar mixture. Top with pieces of butter.Top with top crust. Pinch edges, sprinkle with a little more sugar just to dust the top. Bake @ 450 for 15 minutes then reduce temperature to 350 and bake for 40-45 minutes or until golden brown. Serve warm or cold.

Now to anyone who has never had rhubarb: Rhubarb is a little sour but all the sugar helps out with this BUT this pie is exceptional served with vanilla ice cream!!!!

Sweet & Sour Chicken

I am allllll about quick & easy meals during the summer AKA baseball season at my house. With 3 boys & 1 girl, I am gone ALLLLLLLL the time.

This one is easy to put together, can cook in my crock pot all day while I run around, and yet tastes sooo yummy!


2 Tbsp. ketchup
1 c. water
1/2 c. white vinegar
1 Tbsp. Soy Sauce
1 c. brown sugar
1 1/2 lbs. chicken breasts cut into chunks
2 Tbsp. cornstarch
2 Tbsp. water

Add first 5 ingredients. Put chicken in crock pot. Cover with sauce. Cook on low 6-8 hours, high 3-4 hours. When it is ready & has reached temperature combine cornstarch & water* in small bowl. Stir in slow cooker & cook on high for 15-20 minutes. Stir often until thick.

* I couldn't find my cornstarch so I left this part out. It was very good but would be even better with the sauce!!!!! I would serve this with broccoli normally but my kids love love love corn and I was in a hurry.

Creamy Fruit Salad (my aunt Darlene)

This is the time of year for Reunions & Pot Luck. This is also the time of year for fast & easy recipes that don't heat up your house.

This is the perfect recipe for this time of year.


Ingredients:

1 medium cool whip
1 large pkg instant vanilla pudding (dry)
1 large can pineapple chunks WITH JUICE
 fresh fruit:
I like to use grapes, strawberries, blueberries, mandarin oranges, etc

Mix cool whip, pudding, and pineapple juice together. Pour over fresh fruit. Chill.

Its that easy!!!

Rolo Cookies (my momma)

The other day I had to have a treat for baseball and was planning on making cinnamon rolls (ourbestbites) but had absolutely no time! My awesome great sweet loving mother said I am making cookies can I help and just make extra for you....hmmmmm who would turn this down?????? NOT I lol!!!

SO I told my mom I needed about 3 dozen for 2 teams and extra for us during the game :) Well I should have known better. Mom showed up to the game with about 5 dozen cookies!!! I told you she is great! Well everyone enjoyed these cookies!


This recipe is sooooooo easy and everyone thinks your Betty Crocker cause you could make these!

1 pkg. Rolo's
1 box Devils Food Cake mix
2 eggs
1/3 c. oil

Ok so how hard could it be with only 4 ingredients right!?!?
Mix cake mix, oil, and eggs. Take a small ball of dough and form a ball around the rolo. Remember not to use a ton of dough or you wont have rolo spread throughout it, use as small amount as possible or just do test runs.

Place on greased cookie sheet and Bake @ 350 for 7-8 minutes. Yields about 3 dozen

Lemon Teriyaki Chicken (Taste of Home)

 I am a HUGE fan of Taste of Home recipe books!!!! If I am going to spend money on a recipe book it has to be worth the money!!! I buy the Taste of Home annual book every year and have never been real disappointed. The only other book I have besides TofH is Our Best Bites and would totally recommend this one for sure too!

This is one of those fast and good recipes. It doesn't take a lot of work yet it taste wonderful!!!!




4 boneless skinless chicken breast halves
2 tablespoons flour
3 tablespoons butter
1/4 cup teriyaki sauce
2 tablespoons lemon juice
3/4 teaspoon minced garlic
1/2 teaspoon sugar


Flatten chicken to 1/2-in. thickness; coat with flour (I put the flour in a bag and then add the chicken and shake it up). In a large skillet, cook chicken in butter over medium heat for 4-5 minutes on each side or until no longer pink. Remove and keep warm.
Add the teriyaki sauce, lemon juice, garlic and sugar to the skillet; stir to loosen browned bits. Return chicken to the pan. Bring to a boil. Reduce heat; simmer, uncovered, for 2-3 minutes or until heated through. Yield: 4 servings
